The Greatest Pea Salad

I was traveling in the North Island of New Zealand last month and ate at a fabulous restaurant in Lake Taupo called the Brantry (go if y’all get a chance).

And in the classic Tanda way I ordered the filet mignon. And it came out on the most beautiful plate of pureed squash, fresh sprouts, sautéed butter mushrooms and peas. But not just any peas. They were a delicious combo of rough copped fresh peas, mint, and spring onion.

So this is my attempt at reproducing it! I’ve tested it on some humans and rumor has it as a success. Enjoy!

Greatest Pea Salad

Ingredients
  

  • 1-2 cups fresh peas
  • 1 handful fresh mint
  • 1-2 green onions
  • juice of 1 lemon
  • sea salt to taste

Instructions
 

  • Place all ingredients in a food processor (yes, dig it out of the box) pulse a few times and serve.
